Orange Mexican Whole Brown Basmati Rice

Tomato-colored whole brown basmati rice with cumin, paprika, and turmeric. Toast the rice in the seasoned oil, then cook covered and allow a covered rest before fluffing. The intended yield is four servings.

Instructions

  1. Heat 2 tablespoons olive oil over medium heat. Add 1 small diced onion and cook for 5–7 minutes, stirring occasionally, until softened and lightly golden.

  2. Add 3 minced garlic cloves and cook for 30 seconds.

  3. Add:

    • 2 tablespoons tomato paste
    • 1 teaspoon ground cumin
    • 1 teaspoon sweet paprika
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon ground coriander if using
    • 1/4 teaspoon black pepper

Fry for 1–2 minutes, until aromatic and the tomato paste darkens slightly.

  4. Add 2 cups rinsed and well-drained whole brown basmati rice. Stir through the seasoned oil and toast for 2–3 minutes.

  5. Add 400 g canned crushed tomatoes. Stir well and cook with the rice for 2–3 minutes.

  6. Add 600 ml water or stock and 2 teaspoons salt. Stir once and scrape the bottom of the pot.

  7. Bring to a boil, cover tightly, reduce to the lowest practical heat, and cook for 45 minutes without stirring.

  8. Turn off the heat and leave covered for 15 minutes.

  9. Fluff gently with a fork. If the rice is still firm, sprinkle in 3–4 tablespoons water, cover, cook over very low heat for another 8–10 minutes, then rest covered for 5 minutes.

Success cues

  • The onion is softened and lightly golden before the garlic is added.
  • The tomato paste darkens slightly and smells toasted before the rice is added.
  • The finished rice is tender and separate rather than crunchy or mushy.

Scaling notes

The four-serving yield is intended rather than measured. Scale linear ingredients from that baseline, keeping 600 ml added liquid per original 2 cups rice and 400 g tomatoes. If rice is still firm after resting, judge the optional 3–4 tbsp water addition by texture rather than multiplying it automatically. Cup-to-gram rice conversion is unknown; do not substitute an invented weight or scale the covered cooking time directly.

Development notes
  • One cooking session was underway: 400 ml of the planned liquid had been added, and another 200 ml was confirmed as the intended remainder. Adding that remainder and the final texture were not confirmed. This remains draft.
  • The 400 g crushed tomatoes are not treated as 400 ml additional hydration; keep the separate 600 ml water-or-stock target. Record actual rice weight, liquid used, yield, and tenderness next time.
