Make-Ahead Cast-Iron Campfire Home Fries
Roast about 8 medium potatoes at home, then finish them in cast iron at camp for tender centers and crisp surfaces. Serve as a side for grilled steaks; crisp the potatoes while the charcoal fire builds, then keep them warm while the steaks cook and rest.
Instructions
Steps show original quantities. Use the adjusted ingredient list for your batch; times stay unchanged.
-
At home, preheat the oven to 220°C convection/fan.
-
Cut about 8 medium potatoes into 2–3 cm chunks. Toss with:
- 3 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp optional garlic powder
- 1 tsp dried rosemary or thyme
-
Spread the seasoned potatoes on a baking tray in a single layer with some space between the pieces.
-
Roast for 25–35 minutes, flipping once halfway through. For the make-ahead method, remove them when roughly 90% cooked and lightly golden rather than deeply browned and fully crisp.
-
Cool the potatoes completely, refrigerate in a sealed container, and transport cold in a cooler.
-
At camp, heat the 14-inch cast-iron skillet over medium-high heat and add 1–2 tbsp beef tallow, butter, or olive oil.
-
Add the cold roasted potatoes in a single layer. Leave them undisturbed for 3–4 minutes at a time so a deep crust develops, then turn them. Cook for about 8–10 minutes total, until fully cooked, deeply browned, and crisp.
-
Optionally finish off the strongest heat with 1 tbsp butter, 1 minced garlic clove, and chopped parsley or thyme. Toss briefly, about 30 seconds, and serve.
Success cues
- After the first roast, potatoes are about 90% cooked and only lightly golden, not deeply crisp.
- After the campfire finish, the potatoes are fully tender inside with deeply browned, crisp surfaces.
Scaling notes
Produce counts marked “about” are approximate; adjust for size.
The yield field expresses an approximate starting count of 8 medium potatoes, not a finished serving count. Scale the roasting ingredients with the potatoes, preserving a single layer on the tray and in the skillet. Adjust the 1–2 tbsp finishing fat and optional butter, garlic, and fresh herbs with judgment. Keep each batch uncrowded rather than multiplying the cooking times.
Storage
- Cool completely after roasting, refrigerate in a sealed container, and keep cold in a cooler during transport until reheating.
Development notes
- This untested make-ahead method deliberately skips boiling and parboiling. The first roast stops at lightly golden and roughly 90% cooked; the campfire finish completes cooking and restores crispness.
- Record potato variety, cooling and transport timing, and the final interior texture and crust on the first cook.
