Gourmet Roasted Orange Soup with Barley

A smooth soup of roasted pumpkin or butternut squash, sweet potatoes, and carrots, brightened with lemon and served over chewy barley. Makes about 8–10 bowls. Keep the barley separate for a smooth soup that stays easy to portion.

Instructions

  1. Heat the oven to 220°C fan. Spread 1000 g pumpkin or butternut squash, 700 g sweet potatoes, 500 g carrots, 2 quartered onions, and 6 unpeeled garlic cloves on one or two roasting trays. Toss with 3 tbsp olive oil, 1.5 tsp salt, 0.5 tsp black pepper, 1 tsp paprika, 1 tsp ground cumin, 1 tsp crushed coriander seeds, and 0.5 tsp turmeric. Roast for 35–45 minutes, until fully tender with well-browned, caramelized edges. Squeeze the roasted garlic from its skins and discard the skins.

  2. Heat the 5-quart Dutch oven over medium heat and add 2 tbsp butter or olive oil. Add the roasted onions and cook for 2–3 minutes to deepen their flavor, then add the roasted garlic and remaining roasted vegetables.

  3. Pour in 150 ml white wine, scrape the bottom of the Dutch oven, and reduce for 2–3 minutes until the wine smells sweet and cooked rather than sharp.

  4. Add 1.5 L stock or water, 1 tsp salt, and 0.25 tsp black pepper. Bring to a gentle simmer, partially cover, and cook for 20–25 minutes, until the vegetables are extremely soft. Add additional stock or water as needed, up to about 1.8 L for a looser soup.

  5. Blend directly in the Dutch oven with an immersion blender for about 2 minutes, until very smooth. Add a little more stock or water if the soup is thicker than desired.

  6. Stir in 1 tbsp lemon juice. Taste and add up to another 1 tbsp lemon juice if the soup needs more brightness. Check the salt and add more if needed.

  7. For the barley, combine 1 cup pearl barley, 3 cups water, and 0.75 tsp salt in a saucepan. Simmer covered for about 25–35 minutes, until tender but still pleasantly chewy. Drain any excess water if necessary.

  8. For the best texture and storage, keep the cooked barley separate and place 2–4 tbsp cooked barley into each bowl before ladling the hot orange soup over it. Alternatively, stir the cooked barley into the finished soup immediately before serving, understanding that it will continue absorbing liquid.

  9. Optionally finish each bowl with 2–3 tbsp goat yogurt, a drizzle of olive oil, black pepper, chopped parsley, cilantro or dill, or toasted pumpkin seeds.

Success cues

  • Roasted vegetables are completely tender with distinctly browned and caramelized edges before they enter the soup.
  • White wine has reduced enough that it smells mellow and sweet rather than raw or sharp.
  • Finished soup is very smooth, with a sweet roasted flavor balanced by savory spices and fresh acidity.
  • Barley is tender but retains a pleasant chew.

Scaling notes

Scale the vegetables and barley proportionally, preserving the soup-liquid range. Adjust simmering salt and lemon with the listed starting quantities. The goat yogurt quantity is per bowl: keep 2–3 tbsp for each bowl rather than multiplying that per-bowl amount by a batch scale factor. Other garnishes remain cook-adjusted. Check pot and roasting-tray capacity before increasing the batch.

Storage

  • Keep cooked barley separate from the soup when possible because it continues absorbing liquid during storage.
  • If barley is stored in the soup, loosen the soup with water or stock when reheating.

Substitutions

  • Use 0.75 tsp ground coriander in place of 1 tsp crushed coriander seeds.
  • Use olive oil instead of butter for the soup base.
  • Homemade meat stock may replace water for a deeper savory flavor.
