Gourmet Ground Turkey Taco Filling
A browned ground-turkey filling with tomato paste, warm spices, and a reduced wine-and-vegetable-stock coating. Makes an intended 8–10 tacos. Serve in fresh masa tortillas with tomato salsa, charred corn, goat-yogurt sauce, avocado, or pickled onions as desired.
Instructions
Steps show original quantities. Use the adjusted ingredient list for your batch; times stay unchanged.
-
Mix 120 ml hot water with 1/2 tsp vegetable stock powder and set aside.
-
Heat a 14-inch cast-iron skillet over medium-high heat for 3–4 minutes. Add 1 tbsp refined coconut oil.
-
Add about 1 medium finely diced onion and cook for 5–6 minutes, stirring occasionally, until soft and beginning to brown.
-
Add 3 minced garlic cloves and cook for 30 seconds, just until fragrant.
-
Add 500 g ground turkey. Leave undisturbed for 2 minutes to develop browning, then break into fairly small crumbles and cook for another 5–6 minutes, until no pink remains and some golden-brown bits have developed.
-
Add:
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp ground coriander
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- up to 1/2 tsp mild chili powder
- about 1 tsp kosher salt, reducing the salt if the stock powder is salty
Stir constantly for 1 minute to bloom the spices.
-
Add 30 g tomato paste and cook for 2–3 minutes, stirring, until it darkens slightly and loses its raw aroma.
-
Pour in 60 ml dry white wine or rosé. Scrape up the browned bits from the skillet and cook for about 2 minutes, until the wine has almost completely evaporated.
-
Pour in the 120 ml prepared vegetable stock. Reduce heat to medium-low and simmer for 5–8 minutes, stirring occasionally, until the liquid reduces to a glossy coating and the turkey remains juicy. Add a splash of water if it becomes dry too soon.
-
Taste and adjust seasoning. Optionally stir in a small handful of chopped cilantro and the juice of 1/2 lime for brightness.
-
Remove from the heat as soon as the filling is glossy and moist without pooled liquid. Rest for 3–5 minutes before filling tortillas.
Success cues
- Turkey develops browned, golden bits rather than steaming.
- Tomato paste darkens slightly and smells sweet rather than raw.
- Finished filling is glossy and moist with no liquid pooling in the skillet.
- Turkey remains juicy rather than dry.
Scaling notes
Produce counts marked “about” are approximate; adjust for size.
Scale linear quantities and both ends of the 8–10 taco yield range together after choosing an original taco count. Adjust the 0.5 tsp stock powder, approximately 1 tsp salt, optional chili, cilantro, lime, and extra water with judgment. Keep enough skillet area for browning and reduce to a coating rather than scaling cooking time.
Substitutions
- Olive oil can replace refined coconut oil. Unrefined coconut oil was not recommended because its coconut aroma may compete with the taco seasoning.
- Rosé can replace dry white wine.
Development notes
- This unconfirmed cook remains draft. The resolved formula uses vegetable stock powder because homemade stock was unavailable for this session, and 30 g tomato paste for a deeper savory flavor.
- Next time, record stock-powder strength, salt adjustment, actual taco yield, and whether the reduced filling stays juicy.
