Dutch Oven Stuffed Peppers with Beef, Whole-Grain Rice & Fresh Thyme
Tender peppers filled with beef and whole-grain rice, baked in a tomato-pepper sauce with fresh thyme. Makes 5–6 stuffed peppers, with any extra filling cooked as meatballs alongside. Spoon plenty of sauce over each pepper when serving.

Par-cook the rice: combine 1 cup whole-grain rice, 2¼ cups water, and ½ tsp salt. Bring to a boil, cover, reduce to a gentle simmer, and cook 18–20 minutes. Turn off the heat and uncover. If excess water remains, carefully pour it off. Let the rice steam-dry uncovered for 10 minutes; it should be mostly cooked but still slightly firm.

Prepare 5–6 large bell peppers: cut off the tops, remove seeds and membranes, and finely dice the tops for the sauce. Sprinkle ½ tsp salt total inside the peppers and keep them open.

Make the filling: gently combine 500 g raw ground beef, the entire par-cooked rice batch from step 1, 1 finely diced large onion, 3 minced garlic cloves, 2 tbsp olive oil, 2 tsp salt, ½ tsp black pepper, 1 tsp paprika, ½ tsp ground coriander, 1 tbsp chopped fresh thyme leaves, and 120 ml chicken stock. Mix only until evenly combined, then rest 10 minutes.

Stuff the peppers firmly but not tightly, leaving about 1 cm headspace. If filling remains, form it into meatballs to cook in the sauce alongside the peppers.

Make the sauce in the Dutch oven: heat 1 tbsp olive oil over medium heat. Add all the finely diced tops from the 5–6 peppers and cook 4–5 minutes until softened. Stir in 400 g crushed tomatoes and 2 tbsp tomato concentrate. Add 450 ml boiling water, 2 homemade chicken stock cubes, ½ tsp salt, ¼ tsp black pepper, and 1 tsp fresh thyme leaves. Bring to a gentle simmer.

Spoon 2–3 tbsp of the hot tomato sauce directly into each stuffed pepper so the filling is tomato-infused inside as well as surrounded by sauce.

Nestle the stuffed peppers upright in the Dutch oven. The surrounding sauce should reach roughly three-quarters of the way up the peppers.

Heat the oven to 170°C, no fan. Cover the Dutch oven and bake for 1 hour 20 minutes. Remove the lid and continue baking uncovered for 25–30 minutes.

Remove from the oven and rest uncovered for 15 minutes before serving. Spoon plenty of tomato-pepper sauce over each pepper.
Success cues
- Par-cooked whole-grain rice is swollen and mostly tender but still slightly firm before being mixed into the filling.
- Finished peppers are fully tender while still holding their shape.
- Beef filling is cooked through and juicy.
- Tomato-pepper sauce is bubbling and slightly reduced after the uncovered bake.
Scaling notes
Scale the raw ingredients together and carry the whole par-cooked rice batch into the filling and all reserved pepper tops into the sauce. These are reused components, not extra ingredients to buy. Pepper size affects filling capacity; use the extra-meatball option for leftover filling. Preserve the 5–6-pepper range and check Dutch-oven capacity before increasing the batch.
Storage
- For a cooked batch not being eaten immediately, cool briefly uncovered, then refrigerate promptly in the Dutch oven or shallow containers with sauce.
- Refrigerated cooked stuffed peppers keep about 3–4 days.
Substitutions
- Water can replace the 120 ml chicken stock in the filling.
- This version uses fresh thyme in place of the dried thyme in earlier versions.
Development notes
- The recorded cook used 3 cups water and a full 20-minute rice par-cook, then drained and cooled the rice for next-day use. Peppers were salted and refrigerated a day ahead. The current rice-water instruction is 2¼ cups.
- Pepper tops go into the sauce, and sauce is spooned inside each pepper before baking. The beef stays raw in the filling; the rice is par-cooked.
- The peppers looked great, but this remains draft without tasting feedback. Next time, record rice variety and texture, stock cube size, filling doneness, seasoning, and final yield.
